Meltemi Mediterrania is an exciting new dining concept in the heart of Broadbeach, QLD, brought to life by the renowned Xenia Group, who have over 15 years of experience in hospitality management and culinary excellence. Inspired by the vibrant flavors and traditions of the coastal Mediterranean, Meltemi Mediterrania will offer a fresh, modern take on classic dishes with a strong focus on quality, sustainability, and authentic cooking techniques featuring rotisserie cooking.
We are currently seeking a talented and passionate Head Chef to lead our kitchen team and help shape a dynamic menu that showcases the best of coastal Mediterranean cuisine.
THE ROLE:
As Head Chef, you will be responsible for overseeing the entire kitchen operation, from menu creation to team leadership and cost control. You will have the creative freedom to develop seasonal menus that highlight premium ingredients and the bold, rustic flavors of the Mediterranean coast. Experience in rotisserie cooking is highly advantageous, as this will be a key element of our culinary offering.
Key Responsibilities:
Lead and manage all aspects of kitchen operations and culinary execution
Develop and implement innovative, seasonal menus rooted in coastal Mediterranean traditions
Supervise and mentor kitchen staff, fostering a positive and professional kitchen culture
Ensure exceptional food quality, presentation, and consistency
Oversee food safety, hygiene, and compliance with health regulations
Manage supplier relationships, inventory, and kitchen budgets
Incorporate rotisserie techniques and Mediterranean grilling methods into the menu
Requirements:
Proven experience as a Head Chef or Senior Sous Chef in a Mediterranean-focused or premium restaurant setting
Deep understanding of coastal Mediterranean ingredients, flavors, and techniques
Experience with rotisserie cooking or open-fire grilling is a strong advantage
Excellent leadership, communication, and team-building skills
Culinary qualification or relevant professional training
Strong organizational and time-management abilities
Passion for high-quality, seasonal, and sustainable food practices
