Meltemi Mediterrania is an exciting new dining concept in the heart of Broadbeach, QLD, brought to life by the renowned Xenia Group, who have over 15 years of experience in hospitality management and culinary excellence. Inspired by the vibrant flavors and traditions of the coastal Mediterranean, Meltemi Mediterrania will offer a fresh, modern take on classic dishes with a strong focus on quality, sustainability, and authentic cooking techniques featuring rotisserie cooking.

We are currently seeking a talented and passionate Sous Chef to join our kitchen team and help shape a dynamic menu that showcases the best of coastal Mediterranean cuisine.

THE ROLE:

As a Sous Chef you will work closely with our Head Chef and leadership team to bring our modern Mediterranean vision to life. You’ll be hands-on with prep, service, and menu development, contributing your own expertise while helping mentor junior kitchen staff. This is an opportunity to be part of building something from the ground up — with a team that values tradition, innovation, and excellence.

Key Responsibilities:

  • Execute high-quality dishes with consistency, creativity, and speed during service

  • Assist in the development of new seasonal menu items

  • Maintain high standards of cleanliness, hygiene, and food safety

  • Support daily kitchen operations including prep, stock control, and equipment maintenance

  • Help train, guide, and motivate junior staff

  • Embrace and work with rotisserie cooking and Mediterranean grilling techniques

Requirements:

  • Proven experience in a Sous Chef role, ideally in premium dining or Mediterranean-style cuisine

  • Strong technical skills, including grill and/or rotisserie cooking experience (or eagerness to learn)

  • Ability to work under pressure in a fast-paced, high-standard kitchen

  • Team-oriented with strong communication and leadership potential

  • Professional training or culinary qualifications are a plus

  • Passion for fresh, seasonal, and sustainable food
